HOW TO DISCOVER THE AROMAS OF MONTEROSA EXTRA VIRGIN OLIVE OIL?

Extra Virgin Olive Oil is the highest category of olive oil. It must have no defects and must have the following three attributes: Fruity, Bitter and Pungent (or Peppery).

The way to discover the true characteristics of olive oil is to taste it like this:

  • Pour a small quantity of oil into a small glass.
  • Put the glass on your open hand and cover it with the other in order to warm the oil and keep the aroma in the glass.
  • After 20 seconds close your eyes and inhale the fruity aroma through your nose.
  • Put some oil in your mouth and swirl it around with your tongue so that the whole mouth comes in contact with it. Before you swallow it inhale some air between your teeth in small gusts in order to encourage the sensation of bitterness and pungency (pepperiness).
